Puntang is a mountain in West Java, and the coffee carries its name. The process is black honey: once the cherry is peeled, the bean is dried with almost all of its sticky coating — the mucilage, the “honey” — still on it, instead of having it washed off. Drying like this is slow and needs constant turning, or the coating goes mouldy.

The more of the coating stays on, the darker it dries — hence the “black” in the name: this is the fullest form of the honey process. The beans are single origin, processed and roasted in Indonesia, and offered whole.
